Peel and slice banana. Mash with fork until smooth. In a separate bowl, add eggs, vanilla and cinnamon. I don’t add sweetener but you can. Scramble with a fork. Prepare your pan. I rub a stick of butter on the surface and turn the setting for medium heat. Ladle batter in the pan. One half to three-quarter full. Turn when you see bubbles. Makes 4 4 ounce cakes.
